Stuffed mushrooms
At the request of a friend, I'm going to take another stab at posting recipes and other odd driblets from my life.
I have been on a real stuffed mushroom kick lately, mostly because they're yummy and easy and Steve has been buying them on sale.
Wash mushrooms and set on towel to dry.
Twist and pull stems out of mushrooms and chop into bits. Heat a tablespoon full or two of good light olive oil or butter in skillet on medium heat. Press a clove of garlic through the press and into the pan. Add chopped stems. Saute until garlic is kind of translucent and mushroom pieces start to look done. Mix in sage and parsley. Add salt and pepper. Remove from heat, stir in about 1/4 to 1/2 cup parmesan cheese. Then blend in one raw egg. Stuff into cleaned and prepared mushrooms. Bake at 400 for 15 minutes.
