After buying the ingredients to make another batch of granola months ago, they sat on the counter, and sat and sat and sat. Tonight, I come home utterly exhausted at 11 p.m. and decide this is the night I'll make the granola. I just love it, and don't know why I don't make it more often. It's good with milk or without.
Here's how it goes:
In large bowl, mix:
1 18 ounce container rolled oats
1.5 cups Grape Nuts
1.5 cups wheat germ (refrigerate after opening jar. It will go rancid)
1 cup whole wheat flour
All optional:
3.75 ounce pkg roasted sunflower seeds
2 cups coconut
1 cup chopped dates
1 cup chopped almonds
1 cup pumpkin seeds
In bowl, combine 1 stick butter melter
1/4 cup canola oil
1 cup honey
3 tablespoons molasses
1/2 cup brown sugar
2 teaspoons vanilla.
Mix all together and pour over grains and nuts, stir until all the dry ingredients look moist.
Bake in shallow pans at 300 degrees for 30 to 40 minutes. Turning mixture evenly in pan every 10 to 12 minutes.
Store in airtight container.
