Cheese and egg strata


Woke up hungry this morning and started poking around the kitchen. I had an old loaf of Italian bread in the fridge and wondered what to do with it. I've seen recipes before for strata, so I thought I'd give it a shot. Decided to cube about a quarter to a third of the loaf into a smallish 9 by 13 pan. The cubes were fairly large, maybe an inch square. You should spray the pan with a non-stick spray first.

Then I chipped up a left over pork chop we had in the fridge and sprinkled it in with the break.

Next,  I whisked up 5 eggs with about a cup of milk. Added some freshly ground black pepper. And maybe 1 - 1.5 cups shredded cheddar (Half Mexican-style and half sharp). Poured that over the break. Diced up a tomato and sprinkled it across the end of the pan, just to see what it would taste like.

We baked it at 350 degrees until the eggs puffed up and turned golden brown. Holy cow! It was really delicious. Both the hubby and I are just sitting here talking about how wonderful it is.
